Head of Inflight Operations – Catering

We're looking for a Head of Inflight Operations – Catering to take ownership of our entire inflight product - food and beverage, inflight retail, and duty free. In this role, you'll shape what our passengers experience onboard and act as the main point of contact between Norse and our suppliers.
This is a multi-faceted role covering vendor management, commercial, and operational responsibilities - from menu development and packaging design to budgets, audits, and crew training.
This permanent, full-time, office-based role is located in Riga, Latvia, and offers the opportunity to work alongside driven colleagues and see firsthand how a strong inflight product contributes to the success of a global airline.
Your Responsibilities Will Include:
Owning inflight product management and development - working with suppliers and stakeholders on menu changes, product mix, packaging design, and crew training on inflight products, sales, and service delivery;
Managing supplier relationships end-to-end, including contract management, KPI monitoring, formal business reviews, performance management, and day-to-day coordination;
Owning the Catering and Retail budgets - cost control, invoicing approvals, ordering, and reporting;
Managing catering and service equipment, including stock control and maintenance management;
Driving product performance and identifying new opportunities to maximise revenue streams;
Ensuring regulatory compliance through station audits and operational oversight checks;
Collaborating with Inflight and crew management to develop sales training and product awareness for crew upskilling;
Supporting the Commercial Department in implementing strategic objectives.
What We're Looking For:
5+ years track record as a manager in airline catering, preferably with experience on both the airline and catering supplier side;
Significant experience in vendor relationship management;
Relevant experience in airline catering, product development, or airline customer proposition;
Excellent time management, planning, and organization skills - a self-starter who sees things through to completion;
Energy and drive to deliver beyond expectations, balance priorities effectively, and continuously look for ways to improve our service and operations;
Passion for delivering high levels of safety and service standards;
Advanced Microsoft Office skills (Excel, Word);
Ability to travel at short notice;
Fluency in English, both written and spoken.
